I see that you open issue with version 1.6.3 pointed. Can you try again with version (1.6.5).] ? With this version you don't need to define all values, and made several tests to keep working with very old XWiki image versions and some other custom cases. But maybe missed something.
If you still faces issue, you can reopen issue with more details: XWiki Image and Version that you are using. And all helm values passed. Them I can try to reproduce issue.
