I can only say : "I like : Default, A, C and E with single colone." This makes me thinking that colors are always so personal. Maybe an interesting thing can be to vote on some colors? So that XWiki could propose users themes colors that are nearest to a majority. Maybe once the color editor will be on rails to help produce color themes?

Many people like it for its softness, yet it can endanger accessibility. In an other way, it can be a problem for visually impaired people too. This week I won't have time to focus more on Color Themes, because we need to polish the skin, but would be great to see other proposals for predefined themes.
